HORSERADISH AND YOGURT CRUSTED SALMON
HORSERADISH AND YOGURT CRUSTED SALMON

INGREDIENTS:

  • 3/4 cup Greek 0% plain yogurt
  • 1 Tbsp. prepared Horseradish
  • 1 tsp. Dijon mustard
  • 1 tsp. lemon zest
  • 3 Tbsp. chopped chives
  • 4 x 5-6 oz. filets of salmon
  • 1/4 cup breadcrumbs
  • Cooking spray

DIRECTIONS:

  1. Preheat oven 400°F.
  2. In a bowl combine yogurt, horseradish, mustard, chives and lemon zest, mix well.
  3. Place salmon filets on a foil lined baking sheet. Top each fillet with 3 Tbsp. yogurt mixture. Sprinkle 1 Tbsp. of breadcrumbs on each filet and lightly spray with cooking spray.
  4. Roast salmon for 10-12 minutes or until golden and cooked through.
